Feijão Tropeiro

Ingredients (4 people):

  • Kidney beans, 1 kg, precooked
  • Bacon, 300 g, not smoked
  • Sausage, 300 g, smoked
  • Pork meat, 300 g, not ground
  • Onions, 3 large
  • Garlic, 4 cloves
  • Spring onions, 6
  • Parsley, 1 bundle
  • Bread crumbs or flour, 1 cup
  • Cabbage, 5 leaves
  • Eggs, 7
  • Salt and pepper, to taste

Equipment needed:

  • A large pan
  • A large pot
  • A blender

Cut the pork meat into chunks, the sausage into round slices, and the bacon into sticks.

Chop finely together the garlic and the onions. Pour the content in the pot with the meat and turn it up, so that the fat melts and fries in itself. Add pepper and (extra!) salt, and let everything gook until it dries up.

In the pan, separately cook 3 eggs scrambled. Then add them to the main pot and stir.

Cut the cabbage leaves into thin slices, and roast them in the pan until they soften. Then add them to the main pot.

Chop the parsley, cut the spring onions into thin round slices, rinse and drain the beans, and add all three to the main pot. Sprinkle the bread crumbs. Stir very well.

Put in the plates. Fry the other eggs separately, sunny side up. Lay an egg on top of each dish. Serve with rice!

Drink suggestion: chilled light beer. Cachaça as an aperitif!
