Vegetarian: YES (vegan), without the bacon
Ingredients (4 people):
- Black beans, 500 g
- Tomato sauce, 500 g
- Onions, 2 medium
- Garlic, 2 cloves
- Chili, red, fresh, 2 medium (or to taste)
- Olive oil, 5 ml
- Cinnamon, 1 teaspoon
- Smoked bacon (optional!), 150 g entire piece
- Chicken or vegetable broth, 1 l
- Salt and pepper to taste
- A large pan
- A blender
Chop finely together the onions, garlic, and chilies, with part of the oil. Pour them in the pan, with the rest of the oil, and the bacon (the entire piece).
When the onions turn golden, add the tomato sauce and stir very well until it starts to boil. At that point add the cinnamon, and the beans.
Add broth until the beans are cooked, do not cover, and let it naturally dry up until it has a thicker texture (it should take about 45 minutes, less if the beans are precooked).
Then take about 1/4 of the soup, put it in a blender, turn it into a soft cream, add it back to the pan, and adjust the salt and pepper.
Serve warm, with toasted bread or tortillas. Consider also sprinkling fresh cilantro or parsley on top!
