Sweet cous-cous

Vegetarian: YES (vegan without the butter)

Ingredients (4 people):

  • Cous-cous, 500 g
  • Raisins, 200 g
  • Dates, 200 g
  • Onions, 2 medium
  • Turmeric (kurkuma), 2 teaspoons
  • Cinnamon, 1 teaspoon
  • Olive oil, 2-3 tablespoons
  • Butter, 20 g
  • Salt and pepper to taste

Equipment needed:

  • A pot
  • A bowl
  • A large pan

Cut the onion into thin slices. Warm up the oil in the pan, add the onions, and stir.

When the onions turn golden, add the turmeric and stir for a minute, to make it lose its bitterness.

Cut the dates into half (longitudinally), and remove the seeds with a knife. Then add them to a pan. When they start to caramelize, add the raisins. When they also start to caramelize, add the cinnamon and stir.

Boil some water. Add salt, and also some oil and butter.

Cook the couscous by laying it in the bowl, then pouring the boiling water on it, until it stops absorbing it.

Then add the couscous to the pan. Turn of the fire, and stir. Serve warm.
