Pasta alla Trabìa

Origin: Italy (Sicily)

Vegetarian: NO

Ingredients (4 people):

  • Mezze penne rigate, 400 g
  • Onion, 1 medium
  • Parma or Serrano ham, 100 g
  • Peas, fresh, 250 g
  • Olive oil
  • Chili pepper
  • 1 peeled tomato
  • Tomato concentrate
  • Basil

Equipment needed:

  • A pot
  • A large pan

Chop the onion. Warm up the oil in the pan, add the onions, and stir.

Cut the ham into thin slices, and add it to the pan. After a couple of minutes, cut chop the chili and add it to the pan as well.

Rinse the peas, then add them to the pan, with a bit of boiling water. Add the tomato and the tomato concentrate, and keep stirring on low fire until the peas are cooked to taste.

Cook the pasta. When it is al dente, drain it, add it to the pan, and sprinkle some basil on top.

Drink suggestion: dry white wine. Sicilian, possibly.
